Stuff Needed:

  • Cleaned and prepped nopales.  That's a cactus leaf, gringo.   Google how to de-spikeything them, or buy em ready to go like I do.
  • A Kielbasa sausage
  • 2-3 cans of Ranch Style Beans.   The cheapo ones (WinCo brand for me) work fine.
  • Some (6ish) sopes.  White or yellow corn doesn't matter.
  • One poblano pepper per person.
  • crumbly queso
  • Spanish rice, or just rice, cooked.
  • Olive oil for brushing on nopales
  • Some handy coarse salt.

Brown the kielbasa in a pot, then throw in the beans.  Cook it on low heat while you're putting everything else together.  Stir from time to time as those bastards like to stick to the bottom.  While that's goin, heat your oven to about 350 and also light the grill. 

Once the grill is hot, put the poblano and nopales on the grill.   Resist the urge to flip them, just let them grill for like 5-7 minutes on each side.  Turn the peppers when they're starting to blister.   I think my grill was about 350-400 for most of the cook time.   

When you're about 5 minutes from serving, put the sopes on a baking sheet lined with parchment, and pop em in the oven.    You want them toasty, but not burned-y.   About this time you're going to pull the nopales off the grill.  Immediately brush them with olive oil, then sprinkle coarse salt on em.  

Ok, put it all together.    Pop a sope on the plate, and then put a bit of the rice in it.  Serve a full scoop of rice beside it.  Now smother the sope with bean/kielbasa concoction, then sprinkle some of the crumbly queso on top.

Put one nopales and one pepper on the plate, then serve.
